Cork & Cage Series
2023
Cork & Cage Ale series is a line of experimental bottle conditioned products. Bottle conditioned beer is beer that has been carbonated and fermented in the bottle by adding some sugar and yeast after the initial fermentation. By adding a small amount of sugar to the beer before sealing it in the bottle, the brewer takes advantage of the live yeast that is still suspended in the beer.
Sealing the bottle for a small secondary fermentation process produces carbon dioxide that has nowhere to go and therefore is absorbed by the beer. This causes the beer to age in the bottle – just like wine – and deepens the character in the flavors the longer the beer is allowed to rest.
Each one is a unique recipe and flavor profile! Enjoy!

Cork & Cage: Mulling it Over Cider
6.6% ABV | Hard Cider
This cider, with cinnamon, orange, and ginger, keeps you cool during the warm days and warm during the cold nights. Hints of cinnamon, tart apple, citrus, and clove are both on the nose and palette and intensify as the cider warms. Best served between 45F and 50F.
Cork & Cage: Plum Crazy
5.0% ABV | Ale
The Cork & Cage: Plum Crazy was brewed with Kaffir Lime tea leaves, plum, boysenberry, and Norwegian Farmhouse Ale Yeast - giving it a beautifully rich and fruity taste with light botanical undertones. Best served between 45F and 50F.
